Paul Lato is truly the winemaker to the stars of the culinary world. Paul Lato has been a
long time favorite of Robert Parker, who happened to taste his wines for the first time
back in 2002, and immediately contacted to say, “you have a true talent…I want to be
the first one to write about you.” Since then, Paul has become the winemaker for the
French Laundry’s personal label Modicum, and more recently he signed on for a
collaboration with Wolfgang Puck.

Lato is gaining notoriety among collectors since his 2017 vintage Chardonnay and Pinot
garnered some of the very highest scores among ALL California from Robert Parker. Of
note, Lato’s wines scored higher than other Chardonnay and Pinots that command
prices 2 – 3 times higher!

Lato is a Polish-born, Canadian-educated sommelier. After spending ten years in the
Toronto restaurant trade, he decided to move to the Central Coast of California to
dedicate himself to the production of high-end Pinot Noir, Chardonnay and Syrah. Now
in his 16th year of winemaking, Paul’s aim has always been to convey a European
sensibility in his wine while also unlocking the great potential of Californian vineyards.
His wines are sold in the best restaurants in the United States, as well as Europe and
Japan, and have garnered critical acclaim since the very beginning.
